so, everything i hear and read about eating better for the dreaded word DIET... is keto?????
i wasn't looking for it, but a note From Pinterest in email linked me to the following recipe,,, not bad, I did modify a bit, and need to study the diff options , the one i made today, might have a bit more calories but still shouldn't be bad depending on which options,,, the first ones i made had no coconut flour,, todays did and the picture is today, i chose to make a mini bundt cake pan although the picture makes it look larger. I cut the recipe since its just me, but from what i have read, you can freeze these, the first batch yesterday was minus the coconut flour and wow they really fluffed out high, but of course once cooled they really shrunk.. i think if you really want to be healthy you can just use the egg whites. ( I didn't) you can also choose to use it as french toast.. i like it too, but not a real fan of syrup... I did use light, Pretty good,,,, Would i make again,,, YESSSS,, i also see where you can make a tiny version in a minute in the microwave.

I don't know what plan to follow. So am opting for low fat and low sugar. But, am staying away from coconut oil and coconut flour because it is not good for triglycerides.
Am doing lean meat - chicken, turkey and fish
veggies and fruit
lots of roasted, sauteed cooking (olive and avocado oil)
Whole Wheat products and brown rice
some sweet potatoes (although to tell ya what I read, there is not much real difference in sweet vs white)
biggest thing about the sweet potatoes is that they have beta carotene in them
Diet means if it tastes good, you cannot eat it
